Traditionally, hummus is prepared with chickpeas, but cannellini beans are a great, healthy alternative that create an ultra smooth, creamy texture. This White Bean Hummus is full of rich flavors from the warm garlic, fruity olive oil, silky tahini, and bright lemon. Just like traditional chickpea hummus, you can put your own twist on this recipe by blending in your favorite flavors, like caramelized onion, spicy jalapenos, or roasted pine nuts. Pair as a dip with veggies or crackers, or sub for mayonnaise on your favorite sandwich-or even in chicken salad.

Ingredients

  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • Juice of 2 lemons
  • 2 cloves garlic
  • 2½ tablespoons tahini
  • ½ teaspoon onion powder
  • 2 tablespoons extra- virgin olive oil
  • Sea salt to taste

Directions

  1. Place the cannellini beans, tahini, olive oil, lemon juice, garlic, onion powder, and salt into the blender pitcher in the order listed.
  2. Select BLEND, then choose HIGH. Blend for 45 seconds or until the desired consistency is reached.
  3. Stored in an airtight container, this keeps in the refrigerator for up to 1 week.
