Tomatillo Salsa
Blenders have long been used to make quick work of dips, like traditional tomato-based salsas. Toss in a handful of simple ingredients and with a few pulses you have afresh, vibrant salsa. What sets the Foodi™Blender apart in this recipe is the ability to saute the tomatillos before blending the salsa. Raw tomatillos are very acidic and cooking them reduces the acidity and gives them a nice smokiness. Usually this step would be done on the stovetop, but with the Foodi, it is all done in one pitcher!

Ingredients
- 1 teaspoon vegetable oil
- 1½ pounds tomatillos, husked, rinsed, and chopped
- ½ white onion, coarsely chopped
- 3 cloves garlic
- ½ cup cilantro leaves
- 1 tablespoon lime juice
- 2 jalapei'io peppers, stemmed and cored (remove the seeds and membrane)
- Sea salt, to taste

Directions
- Place the vegetable oil and chopped tomatillos into the blender pitcher. Select SAUTE.
- Remove the pitcher lid and let the contents cool for about 5 minutes.
- Add the onion, garlic, cilantro, lime juice, jalapeflo, and salt into the blender pitcher. PULSE 3 times, select BLEND, then choose HIGH and run for about 20 seconds. Repeat until the desired consistency is reached.
- Stored in an airtight container, this keeps in the refrigerator for up to 1 week.
