Ingredients

  • 4 bone-in pork chops (230 g each)
  • 2 teaspoon salt, divided
  • 11⁄2 teaspoon freshly ground black pepper, divided
  • 1 teaspoon garlic powder
  • 235 ml tomato purée
  • 11⁄2 teaspoon Italian seasoning
  • 1 tablespoon sugar
  • 1 tablespoon cornflour
  • 120 ml chopped onion
  • 120 ml chopped green pepper
  • 1 to 2 tablespoon oil

Directions

  1. Evenly season the pork chops with 1 teaspoon salt, 1 teaspoon pepper, and the garlic powder.
  2. In a medium bowl, stir together the tomato purée, Italian seasoning, sugar, remaining 1 teaspoon of salt, and remaining 2 teaspoon of pepper.
  3. In a small bowl, whisk 180 ml water and the corn flour until blended. Stir this slurry into the tomato purée, with the onion and green pepper. Transfer to a baking pan.
  4. Preheat the air fryer to 176°C.
  5. Place the sauce in the fryer and cook for 10 minutes. Stir and cook for 10 minutes more. Remove the pan and keep warm.
  6. Increase the air fryer temperature to 204°C. Line the two air fryer drawers with parchment paper.
  7. Place the pork chops on the parchment and spritz with oil.
  8. Cook for 5 minutes. Flip and spritz the chops with oil and cook for 5 minutes more, until the internal temperature reaches 64°C. Serve with the tomato mixture spooned on top.
