Ingredients
- Ninja Double Stack XL 9.5L Air Fryer – SL400
- 1/2 cup olive oil
- 2 tablespoons lemon juice
- 2 teaspoons minced garlic
- 2 teaspoons dried thyme
- 2 teaspoons dried oregano
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 Salmon fillets, diced into 2-3cm cubes
- 1 red bell pepper
- 1 orange bell pepper
- 1 green bell pepper
- Optional: Red Onion
- Optional: Lemon wedges for serving
Directions
- In a small mixing bowl, mix the olive oil, lemon juice, minced garlic, thyme, oregano, ground cumin, coriander, salt, and black pepper.
- In a large Ziploc bag or large mixing bowl, add the diced salmon, bell peppers, and onion (if using) pour in the marinade.
- Let it marinate for about 20 to 30 minutes.
- Then thread your salmon, bell peppers, and onions (if using) through the skewer, alternating.
- Place the prepared salmon skewers into one Double Stack Air Fryer basket for 6 to 8 minutes at 180°C air fryer setting, flipping the skewers halfway.
- Plate, serve, and enjoy!
