Ingredients
- 2/3 cup oat bran
- ½ cup flour
- ¼ cup brown sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1/8 teaspoon salt
- ½ cup buttermilk
- 1 egg
- 2 tablespoons canola oil
- ½ cup chopped dates, raisins, or dried cranberries
- 24 paper muffin cups

Directions
- Place the Cook &
- Crisp Basket in your Pressure Cooker Steam Fryer.
- In a suitable bowl, mix the oat bran, flour, brown sugar, baking powder, baking soda, and salt.
- In a suitable bowl, beat the buttermilk, egg, and oil.
- Pour the prepared buttermilk mixture into bowl with dry recipe ingredients and stir just until moistened. Do not beat.
- Gently stir in dried fruit.
- Use baking cups to help muffins hold shape during baking. Grease them with cooking spray, place 4 sets of cups in "cook &
- crisp basket" at a time, and fill each one ¾ full of batter.
- Put on the Smart Lid on top of the Ninja Foodi Steam Fryer.
- Move the Lid Slider to the "Air Fry/Stovetop". Select the "Air Fry" mode for cooking.
- Cook at 165°C for around 12 minutes, until top springs back when touched and toothpick inserted in center comes out clean.
- Repeat for remaining muffins.
