Berries Mascarpone Gelato

Ingredients

  • 3 large egg yolks
  • 3/4 C. whole milk
  • '/2 C. plus 2 tbsp. granulated sugar, divided
  • '/4 C. heavy cream
  • 1 tbsp. light corn syrup
  • 1/2 tsp. vanilla extract
  • 1/2 C. mascarpone
  • 1 C. frozen mixed berries
  • Ninja CREAMi Ice Cream Maker-NC300

Directions

  1. In a small saucepan, add the egg yolks, '/2 C. of sugar and corn syrup and beat until well combined.
  2. Add the mascarpone milk, heavy cream and vanilla extract and beat until well combined.
  3. Place the saucepan over medium heat and cook for about 2-3 minutes, stirring continuously.
  4. Remove from the heat and through a fine-mesh strainer, strain the mixture into an empty Ninja CREAMi pint container.
  5. Place the container into an ice bath to cool.
  6. After cooling, cover the container with the storage lid and freeze for 24 hours.
  7. Meanwhile, in a small saucepan, add the mixed berries and remaining sugar over medium heat and cook for about 8 minutes, stirring occasionally and mashing to form a thick jam.
  8. Remove from heat and transfer the jam into a bowl.
  9. Refrigerate the jam until using.
  10. After 24 hours, remove the lid from container and arrange the container into the outer bowl of Ninja CREAMi.
  11. Install the "Creamerizer Paddle" onto the lid of outer bowl.
  12. Then rotate the lid clockwise to lock.
  13. Press "Power" button to turn on the unit.
  14. Then press "GELATO" button.
  15. When the program is completed, with a spoon, create a 11/2-inch wide hole in the center that reaches the bottom of the pint container.
  16. Add the berry jam into the hole and press "MIX-IN" button.
  17. When the program is completed, turn the outer bowl and release it from the machine.
  18. Transfer the gelato into serving bowls and serve immediately.
