Ingredients

  • 300g leftover rice
  • 100g spinach
  • 1 tablespoon fish sauce
  • 1 teaspoon oyster sauce
  • 2 eggs
  • 200g crab meat
  • 10 basil leaves
  • 3 tablespoons oil
  • 2 sticks lemongrass (white part)
  • 1 thumb galangal
  • 8 shallots
  • 1 or more chilli padi (depends on your spice tolerance)
  • 7 cloves garlic chopped
  • Sugar to taste

Directions

  1. Blend ingredients into a fine paste.
  2. Move slider to AIR FRY/HOB mode and select SAUTÉ on Hi-5. Preheat for 3 minutes and add paste. Sauté for 2 minutes.
  3. Add leftover rice and vegetables, sauté for 1 minute.
  4. Add in fish sauce and oyster sauce, sauté for 1 minute.
  5. Make a well in the center and add in eggs. Once combined add in the crab meat and mix. Stop cooking.
  6. Close lid, move slider to COMBI-STEAM mode and select STEAM AIR FRY function at 160°C for 3 minutes.
  7. Add the basil then stir everything together and plate up.
