Victoria Sponge Cake

Ingredients

    • 400g self-rising flour
    • 450g caster sugar
    • 50g lemon curd
    • 200g butter
    • 4 medium eggs
    • 1 tablespoon vanilla essence
    • 480ml skimmed milk
    • 1 tablespoon olive oil
    • 4 tablespoons strawberry jam

    • 210g icing sugar
    • 1/2 teaspoon strawberry food coloring
    • 1 tablespoon single cream
    • 1 teaspoon vanilla essence
    • 1 teaspoon maple syrup

    Directions

    1. Mix sugar and butter in a bowl using a hand mixer.
    2. Beat eggs with oil, and vanilla in a bowl with the mixer until creamy.
    3. Stir in milk, flour and curd then mix well.
    4. Add butter mixture then mix well.
    5. Divide this mixture in two 4 inches greased cake pans.
    6. Place one pan in each air fryer basket.
    7. Return the air fryer basket 1 to Zone 1, and basket 2 to Zone 2 of the Ninja Foodi 2-Basket Air Fryer.
    8. Choose the "Air Fry" mode for Zone 1 and set the temperature to 190°C and 16 minutes of cooking time.
    9. Select the "MATCH COOK" option to copy the settings for Zone 2.
    10. Initiate cooking by pressing the START/PAUSE BUTTON.
    11. Meanwhile, blend the buttercream ingredients in a mixer until fluffy.
    12. Place one cake on a plate and top it with the buttercream.
    13. Top it jam and then with the other cake.
    14. Serve.
