Ingredients

  • 1/2 cup olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons minced garlic
  • 2 teaspoons dried thyme
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 Salmon fillets, diced into 2-3cm cubes
  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 green bell pepper
  • Optional: Red Onion
  • Optional: Lemon wedges for serving

Directions

  1. In a small mixing bowl, mix the olive oil, lemon juice, minced garlic, thyme, oregano, ground cumin, coriander, salt, and black pepper.
  2. In a large Ziploc bag or large mixing bowl, add the diced salmon, bell peppers, and onion (if using) pour in the marinade.
  3. Let it marinate for about 20 to 30 minutes.
  4. Then thread your salmon, bell peppers, and onions (if using) through the skewer, alternating.
  5. Place the prepared salmon skewers into one Double Stack Air Fryer basket for 6 to 8 minutes at 180°C air fryer setting, flipping the skewers halfway.
  6. Plate, serve, and enjoy!
