Ingredients

  • Ninja 11-in-1 SmartLid Multi-Cooker - OL550
  • 200g black glutinous rice
  • 150g gula melaka
  • ½ teaspoon salt
  • 400g coconut water
  • 400g water
  • 3 knots of pandan leaves
  • 200g fresh coconut milk
  • ½ teaspoon salt

Directions

  1. Using a Ninja® food processor or blender, blend black glutinous rice until they break, do not let it become a powder.
  2. On the SmartLid™, move slider to AIR FRY/HOB mode, select the SAUTÉ function on Hi-5 for 10 minutes. Caramelise gula melaka and add in the pandan leaves.
  3. Add coconut water and water and bring to a boil. Once boiled, add blended black glutinous rice.
  4. Move slider to PRESSURE mode and PRESSURE COOK for 40 minutes on Hi. Leave the pressure on for 10 minutes before releasing the pressure by turning the valve to VENT. Adjust consistency with more water if needed and season to taste with salt.
  5. For the coconut sauce topping, mix coconut milk with salt until it is dissolved.
  6. Scoop Pulut Hitam into a bowl and ladle in some coconut sauce to serve.
