Ingredients
- 50g unsalted butter
- 1 red onion thinly sliced
- 3 cloves garlic
- 1 stick cinammon
- 1 star anise
- 2 pods cardamom
- 3 cloves
- 1 teaspoon turmeric powder
- ½ teaspoon salt
- 3 cups basmati rice
- 3 cups water
- ½ cup unsalted cashew nuts

Directions
- Pour cashews into the crisp basket and place it into the SmartLid™. Move slider to AIR FRY/HOB mode and using the BAKE function, bake cashews for 2 minutes at 180°C. Open the lid and they should be golden brown.
- While cashews are baking, wash basmati rice briefly to rid off dirt. No soaking required.
- Using the SAUTÉ function on Hi-5, add butter to the base pot. Once melt ed, add sliced onions and cook until translucent.
- Add garlic, cinnamon stick, star anise, cardamom pods and cloves and stir briefly until aromas are released. Add water, turmeric powder and salt. Give it a quick stir. Add rice and gently stir.
- Close lid and ensure valve is at SEAL. Move slider to PRESSURE mode and PRESSURE COOK rice on Hi for 2 minutes. Once the SmartLid™ has beeped, turn valve to VENT to naturally release pressure. Open lid and fluff up rice with a spoon.
- Transfer rice to a serving bowl and garnish with baked cashews.
