Ingredients

  • 8 large dry sea scallops (about 340g)
  • Salt and freshly ground black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons chopped flat-leaf parsley
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons capers, drained and chopped
  • 1 teaspoon grated lemon zest
  • 1 clove garlic, minced

Directions

  1. Use a paper towel to pat the scallops dry. Sprinkle lightly with salt and pepper. Brush with the olive oil.
  2. Arrange the scallops in a single layer in the air fryer basket. Air fry at 200°C for 6 minutes, flipping halfway through the cooking time.
  3. In the meantime, in a small bowl, combine the oil, butter, parsley, lemon juice, capers, lemon zest, and garlic. Drizzle over the scallops just before serving.
