Ingredients
- 2 tablespoons ghee
- 3 lamb rack pieces
- 1 large onion chopped
- 1 thumb ginger chopped
- 5 cloves garlic
- 1 tomato chopped
- 1 teaspoon kasturi methi (fenugreek leaves)
- 1 tablespoon masala powder
- 1 tablespoon tumeric
- 1 teaspoon soy sauce
- 200ml coconut milk
- 200ml water
- Salt to taste

Directions
- Move slider to AIR FRY/HOB mode on the SmartLid™. Select SAUTÉ func tion on setting 4. Preheat for 3 minutes and add ghee. Place lamb racks into SmartLid™ and colour all sides. Then remove.
- Add in onions, ginger, garlic, tomato. Cook for a few minutes. Deglaze with a little bit of water. Add in soy sauce, masala powder, turmeric and kasturi methi. Cook for about 3 minutes.
- Add salt. Add lamb and juices back in to the pot. Turn off SAUTÉ function.
- Add coconut milk and water. Ensure lamb is covered with liquid. Cover with foil and close the lid.
- Select SLOW COOK function, set temperature to Hi and time to 4 hours to begin cooking.
- When cooking is complete, serve hot.
