Ingredients

  • 2-3 pcs (500g) stingray
  • 1 tablespoon lime juice
  • Banana leaves (optional) as needed
  • 6 limes, squeezed
  • 3 candlenuts
  • 3 shallots, peeled and sliced
  • 2 garlic cloves, peeled and sliced
  • 2.5-cm knob ginger, peeled and sliced
  • 1 tablespoon ground turmeric
  • 5 pcs of red chilli
  • Salt to taste

Directions

  1. Drizzle lime juice over the stingray.
  2. Prepare ground paste by combining all ingredients into a Ninja® blender and process into a fine paste.
  3. Marinate fish with paste. Set aside for at least 1 hour.
  4. On the SmartLid™, move slider to AIR FRY/HOB mode and select GRILL function. Grill fish on top of a banana leaf (if desired) for 15 minutes in the crisp basket. Brush with leftover marinade.
  5. Open the lid to check for when fish starts to brown. Continue grilling for about 5 minutes until the fish is cooked.
  6. Dish out and serve with cooked rice. Best served with sambal kicap and sambal belacan.
