Ingredients

  • 130g light brown sugar
  • 70g white sugar
  • 170g unsalted butter
  • 5g sea salt
  • 1 egg (around 60g)
  • 5g vanilla bean paste
  • 5g baking powder
  • 4g baking soda
  • 240g all-purpose flour
  • 70g honey macademia nuts
  • 70g chopped dark chocolate

Directions

  1. Use a stand mixer with a paddle attachment to cream together butter, both sugar and salt until pale and fluffy. Add eggs and vanilla bean paste
  2. beat on low to combine.
  3. Sift all-purpose flour, baking powder, baking soda into the mixture and beat on low to combine.
  4. Fold in honey macadamias and chopped dark chocolate. Scoop 60g dough onto a lined baking tray until you have 15 mounds. Place in the fridge for 10 minutes to set.
  5. On the SmartLid™, move slider to AIR FRY/HOB mode and select BAKE function. Preheat to 180°C. Take out the chilled cookie doughs and roll into balls.
  6. Line the basket attachment with baking paper and place 3 cookie balls spaced apart. Bake for 10 minutes at 180°C.
  7. Once baked, let the cookies cool on a wire rack to crisp up. Repeat for the remaining cookies. Dunk in milk and enjoy!
