Ingredients

  • ½ cup 2 tablespoons whole-wheat flour
  • ¼ cup oat bran
  • 2 tablespoons flaxseed meal
  • ¼ cup brown sugar
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ cup buttermilk
  • 2 tablespoons melted butter
  • 1 egg
  • ½ teaspoon pure vanilla extract
  • ½ cup grated carrots
  • ¼ cup chopped pecans
  • ¼ cup chopped walnuts
  • 1 tablespoon pumpkin seeds
  • 1 tablespoon sunflower seeds
  • 16 foil muffin cups, paper liners removed

Directions

  1. Place the Cook &
  2. Crisp Basket in your Pressure Cooker Steam Fryer.
  3. In a suitable bowl, stir the flour, bran, flaxseed meal, sugar, baking soda, baking powder, salt, and cinnamon.
  4. In a suitable bowl, beat the buttermilk, butter, egg, and vanilla. Pour into the prepared flour mixture and stir just until dry recipe ingredients moisten. Do not beat.
  5. Gently stir in carrots, pecans, nuts, and seeds.
  6. Double up the foil cups so you have 8 total and spray with cooking spray.
  7. Place 4 foil cups in "cook &
  8. crisp basket" and divide half the prepared batter among them.
  9. Put on the Smart Lid on top of the Ninja Foodi Steam Fryer.
  10. Move the Lid Slider to the "Air Fry/Stovetop". Select the "Air Fry" mode for cooking.
  11. Air-fry at 165°C for around 9 to 11 minutes or until toothpick inserted in center comes out clean.
  12. Repeat to cook remaining 4 muffins.
