- ½ cup 2 tablespoons whole-wheat flour
- ¼ cup oat bran
- 2 tablespoons flaxseed meal
- ¼ cup brown sugar
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ teaspoon cinnamon
- ½ cup buttermilk
- 2 tablespoons melted butter
- 1 egg
- ½ teaspoon pure vanilla extract
- ½ cup grated carrots
- ¼ cup chopped pecans
- ¼ cup chopped walnuts
- 1 tablespoon pumpkin seeds
- 1 tablespoon sunflower seeds
- 16 foil muffin cups, paper liners removed

Directions
- Place the Cook &
- Crisp Basket in your Pressure Cooker Steam Fryer.
- In a suitable bowl, stir the flour, bran, flaxseed meal, sugar, baking soda, baking powder, salt, and cinnamon.
- In a suitable bowl, beat the buttermilk, butter, egg, and vanilla. Pour into the prepared flour mixture and stir just until dry recipe ingredients moisten. Do not beat.
- Gently stir in carrots, pecans, nuts, and seeds.
- Double up the foil cups so you have 8 total and spray with cooking spray.
- Place 4 foil cups in "cook &
- crisp basket" and divide half the prepared batter among them.
- Put on the Smart Lid on top of the Ninja Foodi Steam Fryer.
- Move the Lid Slider to the "Air Fry/Stovetop". Select the "Air Fry" mode for cooking.
- Air-fry at 165°C for around 9 to 11 minutes or until toothpick inserted in center comes out clean.
- Repeat to cook remaining 4 muffins.
