Ingredients

  • Eggs – 5
  • Coconut flour - 2 tbsp
  • Almond flour - 192g
  • Orange zest - 1 tbsp
  • Cranberries, chopped - 90g
  • Cinnamon - 1/2 tsp
  • Butter, melted - 3 tbsp
  • Erythritol -170g
  • Baking powder - 1 1/2 tsp
  • Vanilla - l tsp
  • Heavy cream - 3 tbsp

Directions

  1. In a mixing bowl, mix almond flour, cinnamon, baking powder, and coconut flour.
  2. In a separate bowl, whisk eggs with butter, sweetener, heavy cream, vanilla, and orange zest until frothy.
  3. Pour the egg mixture into the almond flour mixture and mix until just combined. Add cranberries and fold well.
  4. Spoon batter into the silicone muffin molds.
  5. Install a crisper plate in both drawers, then place half of the muffin molds in the zone 1 drawer and half in the zone 2 drawer, then insert the drawers into the unit.
  6. Select zone 1, select Bake, set the temperature to 180℃, and set the time to 20 minutes.
  7. Select the Match button to copy the zone 1 settings to zone 2.
  8. Press the Start/Stop to begin cooking.
  9. Serve and enjoy.
