Ingredients
- 130g frozen shoepeg corn, thawed
- 140g cooked black beans
- 30g diced onion
- 1/2 teaspoon cumin
- 2 teaspoons lime juice, plus extra for serving salt and pepper
- 2 large avocados, split in half, pit removed
- Ninja Double Stack XL 9.5L Air Fryer – SL400
Directions
- Mix together the corn, beans, onion, cumin, and lime juice. Season to taste with salt and pepper.
- Scoop out some of the flesh from centre of each avocado and set aside. Divide the corn mixture evenly between the cavities.
- Set avocado halves in the Zone 1 basket and air fry at 180°C for 6 to 8 minutes, until the corn mixture is hot.
- Season the avocado flesh that you scooped out with a squirt of lime juice, salt, and pepper. Spoon it over the cooked halves.
