Blackberry And Blueberry Jam Parfait

Blackberry And Blueberry Jam Parfait

This recipe was developed in honor of my husband, who always orders a parfait at our local bakery despite the endless options of delectably sweet breakfast pastries. While a parfait is traditionally made up of yogurt, granola, and fruit, the layer of homemade jam in this parfait is what makes it special. I love the combination of sweet blueberries and blackberries that perfectly complements the tartness of the Greek yogurt. Top with granola, nuts, and seeds if you desire, or enjoy as-is.

Ingredients

  • 1½ cups fresh blueberries
  • 1½ cups fresh blackberries
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 teaspoons fruit pectin Greek yogurt, for serving Granola, for serving (optional)
  • Ninja Foodi Blender Cold &
  • Hot - HB150

Directions

  1. Place the blueberries, blackberries, sugar, lemon juice, and fruit pectin into the blender pitcher in the order listed.
  2. PULSE 3 times, then select SAUCE/DIP.
  3. Transfer the jam into a heat-safe glass container and chill at least 2 hours in the refrigerator.
  4. When ready to serve, layer the berry jam, Greek yogurt, and granola (if using) as desired in small glasses to create a parfait.
