Ingredients

  • 300 g mixed berries
  • 2 tablespoons sugar
  • 1 tablespoon cornflour
  • 1 tablespoon fresh lemon juice
  • 30 g plain flour
  • 20 g rolled oats
  • 1 tablespoon granulated sugar
  • 2 tablespoons cold unsalted butter, cut into small cubes
  • Whipped cream or ice cream (optional)
  • 240 ml milk
  • 50 g granulated sugar, plus 2 tablespoons
  • 30 g scone mix
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 tablespoons melted butter
  • Cooking spray
  • 50 g desiccated, sweetened coconut

Directions

  1. Preheat the air fryer to 205°C.
  2. Filling: In a round baking pan, gently mix the berries, sugar, corn flour, and lemon juice until thoroughly combined.
  3. Topping: In a small bowl, combine the flour, oats, and sugar. Stir the butter into the flour mixture until the mixture has the consistency of breadcrumbs.
  4. Sprinkle the topping over the berries.
  5. Put the pan in the zone 1 air fryer basket and air fry for 15 minutes. Let cool for 5 minutes on a wire rack.
  6. Serve topped with whipped cream or ice cream, if desired.
  7. Place all ingredients except coconut in a medium bowl.
  8. Using a hand mixer, beat on high speed for 3 minutes.
  9. Let sit for 5 minutes.
  10. Preheat the air fryer to 165°C.
  11. Spray a baking pan with cooking spray and place pan in the zone 2 air fryer basket.
  12. Pour filling into pan and sprinkle coconut over top.
  13. Cook pie for 20 to 23 minutes or until center sets.
