Bacon-And-Eggs Avocado And And Simple Scotch Eggs

Ingredients
- 1 large egg
- 1 avocado, halved, peeled, and pitted
- 2 slices bacon
- Fresh parsley, for serving (optional)
- Sea salt flakes, for garnish (optional)
- 4 large hard boiled eggs
- 1 (340g) package pork sausage meat
- 8 slices thick-cut bacon
- 4 wooden toothpicks, soaked in water for at least 30 minutes
Directions
- Spray the zone 1 air fryer basket with avocado oil. Preheat the air fryer to 160 degrees C.
- Fill a small bowl with cool water. Soft-boil the egg. Place the egg in the zone 1 air fryer basket. Air fry for 6 minutes for a soft yolk or 7 minutes for a cooked yolk. Transfer the egg to the bowl of cool water and let sit for 2 minutes. Peel and set aside.
- Use a spoon to carve out extra space in the center of the avocado halves until the cavities are big enough to fit the soft-boiled egg. Place the soft-boiled egg in the center of the one half of the avocado and replace the other half of the avocado on top, so the avocado appears whole on the outside.
- Starting at one end of the avocado, wrap the bacon around the avocado to completely cover it. Use toothpicks to hold the bacon in place.
- Place the bacon-wrapped avocado in the zone 1 air fryer basket and air fry for 5 minutes, or until the bacon is cooked to your liking. Serve in a bed of fresh parsley, if desired, and sprinkle with salt flakes, if desired.
- Best served fresh. Store extras in an airtight container in the fridge for up to 4 days. Reheat in a preheated 160 degrees C air fryer for 4 minutes, or until heated through.
- Slice the sausage meat into four parts and place each part into a large circle.
- Put an egg into each circle and wrap it in the sausage. Put in the refrigerator for 1 hour.
- Preheat the air fryer to 235 degrees C.
- Make a cross with the two pieces of thick-cut bacon. Put a wrapped egg in the center, fold the bacon over top of the egg, and secure with a toothpick.
- Air fry in the preheated zone 2 air fryer basket for 25 minutes.
- Serve immediately.
